These grain free muffins digestion supportive as they are super high in fiber!
Preheat oven to 400 F and grease a muffin tin
In a bowl, whisk together dry ingredients: coconut flour, baking powder and soda, cinnamon, pumpkin spice and salt
In a large bowl, whisk together the wet ingredients: coconut oil, maple
syrup, pumpkin puree, vanilla extract, and eggs
Add dry ingredients to wet ingredients and mix well until all lumps are
gone. Add in chopped pecans and mix well.
Divide batter into 12 muffins in the muffin tin and top with 1 pecan
Bake for 25 minutes or until edges are golden brown
